Hokkien Mee Recipe

This is a simple dish consisting of noodles stewed with prawns and squid. Egg noodles served in dark soup stock with prawns, squid, fish cake and many other flavorful ingredients. Sometimes this dish is served with freshly cut red chili slices in soy sauce. A strainer will make this dish easier to make.

Ingredients:

  • 1 lb. (450 g) fresh egg noodles
  • 2 Tbsp. vegetable oil
  • 2 cloves garlic, crushed
  • 4 pieces of squid, scored
  • 8 raw prawns, peeled
  • 5 slices of fish cake
  • 1 cup Chinese cabbage, sliced
  • 1 cup chicken stock or hot water
  • 1 Tbsp. dark soy sauce
  • 1 tsp. oyster sauce
  • 2 Tbsp. light soy sauce

Steps:

  1. Pour boiling water over egg noodles, then drain and rinse.
  2. Heat vegetable oil in wok, add garlic and stir fry for a minute.
  3. Add prawns, squid, and fish cake slices and stir fry for two more minutes.
  4. Add cabbage and toss with the fish ingredients.
  5. Add egg noodles, chicken stock (or hot water), dark soy sauce, oyster sauce, and light soy sauce.
  6. Stew on low-medium heat for about five minutes, then serve.
  7. Makes enough for 4 servings.
