This flavorful Indonesian dish is composed of a vegetable salad
served with peanut sauce dressing. Compared to typical western salads,
Gado Gado contains much more sauce, so that the vegetables are well
coated.
Ingredients:
1 cup washed bean shoots
2 Tbsp. vegetable oil
2 squares fresh beancurd, cut in strips
½ cup Chinese cabbage, chopped
½ cup cucumber, sliced into matchstick shapes
1 cup commercial Indonesian peanut sauce
1 pappadam, deep fried (Pappadam is a thin flatbread)
1 hardboiled egg
Steps:
Place bean shoots neatly on plate. Heat oil and fry beancurd
quickly. When cool, cut into small cubes.
Steam cabbage until done, then drain and place atop bean shoots.
Add cucumber, then top with beancurd pieces. Warm the peanut sauce
and spoon generously over vegetables.
Crush pappadam and sprinkle on sauce. Slice hardboiled egg and
arrange on top. Makes enough for 2 servings.
