These pork chops are marinated, battered, and deep fried, served with
a sweet and spicy dipping sauce. Mmm…
Ingredients:
4 pork chops
1 Tbsp. oyster sauce
1 Tbsp. sugar
1 Tbsp. ginger juice
˝ tsp. five spice powder
1 Tbsp. rice wine or dry sherry
˝ cup water
1 ˝ Tbsp. cornflour
1 ˝ Tbsp. white flour
1 egg
Enough oil for deep frying
For the dipping sauce, you’ll need:
2 Tbsp. oyster sauce
2 Tbsp. hoisin sauce
1 Tbsp. sugar
˝ tsp. sesame oil
1 Tbsp. hot water
Steps:
Halve pork chops and flatten with a mallet. Make marinade from
oyster sauce, sugar, ginger juice, five-spice powder, rice wine, and
water. Mix well and add pork chops. Cover bowl and chill for two
hours.
Mix cornflour, white flour, and water. Add egg and beat well.
Dip pork chops in batter until well coated. Heat oil for deep
frying, then fry battered pork until it is golden brown.
To make dipping sauce, combine oyster sauce, hoisin sauce,
sugar, sesame oil, and hot water. Makes enough for 4 servings.
