Char Kueh Teow (char kway tow) Recipe

Easy to prepare, irresistible and delicious, this is one dish that
your family will plead with you to make over and over again.
Ingredients:
- 450g/1lb rice noodles [hor fun]
- 8 prawns – uncooked
- 1 tbsp vegetable oil
- 2 cloves garlic – crushed
- 1 dried red chili – soaked, drained, chopped
- 2 eggs – beaten
- 2 tsp dark soy sauce [substitute – mushroom soy sauce]
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 cup clams – rinsed
- 1 finely sliced lup cheong sausage
- 1 cup bean shoots
- 4 spring onions – chopped
Steps:
- Soften the noodle sheets by pouring boiling water over them
- Cut the noodles into ½ inch strips
- Drain
- Peel and devein prawns
- Add oil to heated wok
- Stir fry garlic and chili for two minutes
- Add noodles and toss
- Push noodles to one side
- Pour eggs into center
- Cover eggs with noodles and toss
- Add sauces, prawns, sausage and bean shoots
- Stir fry until cooked
- Top with spring onions
Serves 4.
