Blachan Spinach Recipe
This creatively delicious side dish awakens spinach or any leafy
green vegetable with the surprise of blachan.
Ingredients:
- 450g / 1 lb spinach
- 3 fresh red chilies
- 1 tbsp blachan
- 3 tbsp vegetable oil
- 1 tsp sugar
- 1 pinch salt
- 1 crushed garlic clove
- 2 tsp dried ground shrimp
Steps:
- Thoroughly wash spinach in cold water
- Shake dry
- Cut spinach into finger length slices
- Make a paste by blending chilies and blachan
- Add oil to heated wok
- Stir fry paste for 30 seconds
- Add sugar, salt, garlic and shrimp
- Stir fry for one minute
- Add spinach.
- Toss until soft – about a minute or two
Serves 4.
