Blachan Spinach Recipe

This creatively delicious side dish awakens spinach or any leafy green vegetable with the surprise of blachan.

Ingredients:

  • 450g / 1 lb spinach
  • 3 fresh red chilies
  • 1 tbsp blachan
  • 3 tbsp vegetable oil
  • 1 tsp sugar
  • 1 pinch salt
  • 1 crushed garlic clove
  • 2 tsp dried ground shrimp

Steps:

  1. Thoroughly wash spinach in cold water
  2. Shake dry
  3. Cut spinach into finger length slices
  4. Make a paste by blending chilies and blachan
  5. Add oil to heated wok
  6. Stir fry paste for 30 seconds
  7. Add sugar, salt, garlic and shrimp
  8. Stir fry for one minute
  9. Add spinach.
  10. Toss until soft – about a minute or two

Serves 4.
