Blachan Okra Recipe

Okra, also known as lady fingers, is funny looking and often slimy when cooked. Definitely something that most ladies would find offensive… until they taste this fabulous side dish

Ingredients:

  • 250g/9oz sliced okra
  • ˝ cup dried shrimp
  • 1 clove garlic
  • 8 shallots – OR 1 onion
  • 4 fresh chilies OR 4 chilies dried, soaked, drained and chopped
  • 1 small slice of blachan
  • 2 tsp sugar
  • 1 pinch salt
  • 4 tbsp vegetable oil
  • 1 tbsp tamarind water

Steps:

  1. Make a paste by pounding shrimp, garlic, shallots, chilies, blachan, sugar and salt
  2. Heat oil in wok
  3. Add mixture to hot oil and rapidly stir fry
  4. Add okra
  5. Stir one to two minutes
  6. Add tamarind water
  7. Simmer one to two minutes
  8. Serve piping hot

Serves 4.
