Beef Rendang Recipe

An extremely popular recipe featuring spiced beef cooked in coconut milk. Why not make a lot? Eat some now and freeze the rest for later.

Ingredients:

  • 2 lbs beef cut into chunks
  • 2 tbsp desiccated coconut
  • 2 cloves garlic
  • 2 onions
  • 2 dried chilies – soaked, drained and chopped
  • 1 stalk lemon grass – white part only
  • 1 tbsp fresh grated ginger
  • 1 tbsp fresh grated galangal
  • 3 tbsp vegetable oil
  • ½ tsp turmeric
  • 2 tsp sweet paprika
  • 1 tsp curry powder [Malay]
  • 1 tsp sugar
  • 1 tsp salt
  • 3 cups coconut milk
  • 1 cup water

Steps:

  1. Add beef to a pot of boiling water
  2. Reduce heat
  3. Simmer – 10 minutes
  4. Toast coconut in a dry pan
  5. Set coconut aside
  6. Grind garlic, onions, chilies, lemongrass ginger and galangal into a paste
  7. Pour oil into a hot wok
  8. Add paste and cook – 5 minutes
  9. Add turmeric, paprika, curry powder, sugar, and salt
  10. Stir in toasted coconut
  11. Simmer five minutes more
  12. Add coconut milk and water.
  13. Drain beef and add to wok
  14. Bring to a boil
  15. Stir
  16. Simmer for about one hour – stirring occasionally
