Beef Rendang Recipe

An extremely popular recipe featuring spiced beef cooked in coconut
milk. Why not make a lot? Eat some now and freeze the rest for later.
Ingredients:
- 2 lbs beef cut into chunks
- 2 tbsp desiccated coconut
- 2 cloves garlic
- 2 onions
- 2 dried chilies – soaked, drained and chopped
- 1 stalk lemon grass – white part only
- 1 tbsp fresh grated ginger
- 1 tbsp fresh grated galangal
- 3 tbsp vegetable oil
- ½ tsp turmeric
- 2 tsp sweet paprika
- 1 tsp curry powder [Malay]
- 1 tsp sugar
- 1 tsp salt
- 3 cups coconut milk
- 1 cup water
Steps:
- Add beef to a pot of boiling water
- Reduce heat
- Simmer – 10 minutes
- Toast coconut in a dry pan
- Set coconut aside
- Grind garlic, onions, chilies, lemongrass ginger and galangal
into a paste
- Pour oil into a hot wok
- Add paste and cook – 5 minutes
- Add turmeric, paprika, curry powder, sugar, and salt
- Stir in toasted coconut
- Simmer five minutes more
- Add coconut milk and water.
- Drain beef and add to wok
- Bring to a boil
- Stir
- Simmer for about one hour – stirring occasionally
