Achar Recipe

A side dish inspired by Indians who migrated to Singapore, this side dish goes well with anything and everything.

Ingredients:

  • 1 cucumber – cut into matchsticks
  • 1 carrot – cut into matchsticks
  • 3 dried red chilies – soaked, drained and chopped
  • 2 shallots
  • 1 in knob of ginger
  • 1tsp turmeric
  • 2 macadamia nuts or candlenuts
  • 1 tbsp dried shrimp [soaked for 10 minutes in cold water]
  • 2 tbsp vegetable oil
  • 1 tbsp sugar
  • 6 whole peeled shallots
  • 3 cloves garlic
  • 1 tbsp grated ginger
  • 1 tsp salt
  • 2 tbsp vinegar
  • 1 cup green beans – cut into matchsticks
  • 1 cup cauliflower florets
  • 3 fresh red chilies

Steps:

  1. Soak cucumber and carrot in salted water – 30 minutes
  2. Blend chilies, shallots, ginger, nuts and prawns into a paste
  3. Fry paste in heated oil – 3 minutes
  4. Stir in sugar
  5. Add shallots, garlic and ginger
  6. Stir fry – 2 minutes
  7. Stir in salt and vinegar
  8. Add drained carrot, beans and cauliflower
  9. Cook – 3 to 4 minutes
  10. Add drained cucumber and fresh chilies
  11. Stir fry – 4 to 5 minutes
  12. Cool

Serves 4

Step 1, better to use White wine to soak the cucumber, carrots and shallots.
Step 2. I am not sure this is necessary. The chilliness can be mix in later with curry powder, turmeric and paprika (if necessary)
Step 3. Do not fried the veggies. Keep it separate.
Step 4. Sugar should be added with step 1. Leave it for four hours or more.
Step 5 as in Step 1
Step 5, 6, 7, 8, 9. 10, 11, 12 not necessary.
