Achar Recipe

A side dish inspired by Indians who migrated to Singapore, this side
dish goes well with anything and everything.
Ingredients:
- 1 cucumber – cut into matchsticks
- 1 carrot – cut into matchsticks
- 3 dried red chilies – soaked, drained and chopped
- 2 shallots
- 1 in knob of ginger
- 1tsp turmeric
- 2 macadamia nuts or candlenuts
- 1 tbsp dried shrimp [soaked for 10 minutes in cold water]
- 2 tbsp vegetable oil
- 1 tbsp sugar
- 6 whole peeled shallots
- 3 cloves garlic
- 1 tbsp grated ginger
- 1 tsp salt
- 2 tbsp vinegar
- 1 cup green beans – cut into matchsticks
- 1 cup cauliflower florets
- 3 fresh red chilies
Steps:
- Soak cucumber and carrot in salted water – 30 minutes
- Blend chilies, shallots, ginger, nuts and prawns into a paste
- Fry paste in heated oil – 3 minutes
- Stir in sugar
- Add shallots, garlic and ginger
- Stir fry – 2 minutes
- Stir in salt and vinegar
- Add drained carrot, beans and cauliflower
- Cook – 3 to 4 minutes
- Add drained cucumber and fresh chilies
- Stir fry – 4 to 5 minutes
- Cool
